3 Comforting Slow Cooker Recipes to Try

Happy Tuesday friends! I have to say I am just loving writing and posting on here again. It is bringing so much joy to my days and I hope a little to yours as well. Today, I wanted to share some early fall slow cooker recipes that are comforting and simple. I am new to the crock pot and slow cooker world and I don’t know what took me so long…It is wonderful! It takes a little more prep in the mornings but then you don’t have to cook dinner in the evenings and usually have leftovers. It’s a dream! As we get closer to Autumn, I am craving more comforting and warming meals like soups, apple butter, and stews. It might be too early for some of you but I have always loved cozy dinners and so I am starting early.

Recipe 1: Let’s start with maybe the coziest one of all and that’s Apple Butter. Have you had it? It doesn’t have any dairy included it is just apples, sugar, and spices. It is my favorite thing to have on toast in the mornings and I usually buy it locally during the fall but now that I have learned how to make it at home I can make a big batch and enjoy it year-round. I just freeze what I am not going to use. This is the recipe I used as a baseline for how to make it. I will be making adjustments next time though for my personal tastes. As it was a little too sweet for me. I would use a real mix of different types of apples like green and red, with less sugar, and a little less nutmeg. That said it still is delicious and I am absolutely enjoying it.

Recipe 2: I don’t know about you but I love chicken pot pie. My dad made it for me growing up but now that I am gluten-free I don’t get to have it very often unless someone is willing to make GF pie crust which take a quite a bit of time. But I found a wonderful-looking recipe for slow cooker chicken pot pie and am excited to make it this week! Make it with me and tell me what you think 🙂 She uses a lot of shortcuts in her recipe which I can appreciate as a busy person but I think I’ll reduce those and use my own veggies instead of using a frozen bag. Unless I am pressed for time I like to chop my own veggies like celery, onion, and carrots, and will add corn and a few peas (not a big fan of mushy peas). What’s lovely about cooking is you can tweak things to your liking so instead of pre-cut frozen veggies you can customize it to what you like.

Recipe 3: Slow cooker Butternut Squash Mac & Cheese are you drooling like me?? I love butternut squash all year round and have used it as a replacement for cheddar cheese or other cheeses you’d use in mac and cheese before and it is delicious. I think not only will this recipe get you into the fall spirit but it also is a healthier and more nutritional way to eat mac and cheese. I have also made it for kids and they love it! So if you struggle with getting them to eat more veggies then maybe this is a way to sneak a few more in there. I hope to make this one this week as well and my stomach is already rumbling just thinking about it.
