


Hello sweet friends! Today I wanted to share a super easy winter soup idea that everyone in your family will love! Yes even your kids that don’t typically like vegetables. This soup is packed with veggies and leaves you feeling warm and comforted through cold winter days. I love warm soups all year around but especially in the Fall and Winter. There is just somethings so comforting about sitting down for dinner with your cozies on and tucking into a warm delicious soup. This one also happens to be quite healthy as it isn’t packed with loads of butter or cream. Nothing wrong with those of course but this soup simply doesn’t need them and gives you that velvety texture we all love all on its own.
All you need is a big pot or I use my cast iron dutch oven from Hearth & Hand at Target. It works wonderfully and is only $50 instead of the ever so pretty but very expensive Le Creuset dutch ovens. You probably won’t even have to venture to the store for your soup just your freezer! I always have frozen veggies on hand and it makes this meal even easier because it has little to no clean up. You also only really need to watch the soup in the beginning when you are cooking your onions and garlic to ensure they don’t burn but once you throw the cauliflower and broccoli in with your broth and spices you can toss the lid on and go watch a show. You’ll come back to a delicious soup that only needs to be blended together and then it’s ready for eating.
I love warm and nourishing meals especially when they are simple and I don’t have to wash a ton of pans after the dinner it’s made. Ps it can also be made entirely vegetarian or vegan just swap out the broth and don’t add the cheese 🙂
